Carbone Riviera, a new seafood restaurant, has officially opened at the Bellagio on the Las Vegas Strip. This venture is a collaboration between Major Food Group International and MGM Resorts. The restaurant replaces the former Picasso restaurant and offers an Italian coastal dining experience with seafood flown in daily.
Major Food Group co-founders Mario Carbone, Jeff Zalaznick, and Rich Torrisi aim to redefine luxury dining in Las Vegas, highlighted by exceptional cuisine and impeccable hospitality. The Bellagio's Chief Content, Hospitality, and Development Officer, Ari Kastrati, praised the partnership, noting the restaurant's potential to create a world-class seafood experience.
Carbone Riviera features interior design by Martin Brudnizki and showcases artworks by renowned artists like Miro and Picasso, along with a unique deck featuring a Riva yacht that allows guests to view the Bellagio Fountains.
Zalaznick expressed excitement about their role as custodians of the iconic dining room, describing Carbone Riviera as a realization of a long-held dream. The restaurant's menu includes a variety of crudo, seafood dishes, and classic Italian-American offerings.
Some highlights include Nantucket Bay Scallops with Brown Butter and Shaved White Truffles, Linguine Vongole Rosso, and a two-pound lobster arrabbiata served with hand-crafted fettuccine. The main attraction is the whole-fish program, featuring a selection of fish prepared in various styles, from grilling over Japanese charcoal to baking in a salt crust.
Signature dishes from the original Carbone include Spicy Rigatoni Vodka and Caesar alla ZZ. Desserts feature innovative takes on Italian classics, such as Stracciatella Tiramisu. The wine list emphasizes champagne and coastal Italian whites, while the cocktail menu includes creative offerings like the Pistachio Colada and Strawberry Pomodoro.
The restaurant accommodates 240 guests and features a design inspired by Mediterranean elegance and the vibrant colors of the sea. Guests will pass through a custom mosaic portal to enter, experiencing a transition from the casino atmosphere to the refined dining space.
The dining area boasts deep terra cotta leather banquettes and custom Murano glass fixtures, while outdoor terraces provide stunning views of Lago di Como, merging the Las Vegas spectacle with Riviera charm.
Carbone Riviera is open daily from five to eleven PM, with reservations available via Bellagio.com or through the Bellagio Concierge.
